Okay. So I’m just going to have to deal with posting fuzzy iPhone pics until I learn how to use the huz’s fancy DSLR. Ugh. But it’s got so many buttons, you guys! And what do I know about shutter speed? Or f-stops? You got it. Nothing.
Anyhoodle. These are the first in a series of cupcakes I’m calling “Cocktail Cupcakes.” First up, pina coladas–pineapple flavored yellow cake with coconut buttercream.
These were super easy to make. I used yellow cake mix, but I replaced water with pineapple juice. And I flavored regular vanilla buttercream with 1/4 tsp of coconut extract. I got a bazillion of those cocktail umbrellas at Gordon Food Service, which really kind of make the cupcakes, don’t you think?
Here’s a list of other cocktails I’m planning to make into cupcakes:
- Mojito
- Margarita
- Strawberry daiquiri
- Chocolate martini

How about a Captain & Coke?
Have you had cupcakes made with coke or 7-up. They are pretty good and also less calories. Add the cals. in the icing by adding a little captain to the buttercream! Just another idea! Love ya–Keep up the GREAT work.

YUM-O for a cupcake recipe
My favorite drink is Coke and Vanilla Stoli. Not sure how you’d do Coke flavor but anything vanilla is good.
However, I recently learned about a White Romanian: Vanilla Stoli, Kahlua, banana liqueur, milk and 2 slices bananas. That would have made into an AWESOME cupcake recipe to use when I was doing Gavin’s monkey cupcakes last spring. Mmmmmm.
